Tortilla Chicken Soup

- Tortilla Chicken Soup-

Ingredients:

1 lb organic chicken

1 32 oz organic chicken stock

20 oz water

1 can organic fire roasted tomatoes from Trader Joe's 1 can organic black beans 2 tortilla

organic mozzarella or vegan cheese ( if you can tolerate it)

1 avocado 1 yellow onion

1 clove garlic

2 Limes

1 tsp cumin

1 tsp coriander

Dash of Sea salt

Dash of Pepper

Dash of Cayenne Pepper

Preparation:

Chop onions and garlic.

Put coconut oil in pot and cook for 10 minutes.

Add chicken stock.

Medium heat in a separate pan, cook cut chicken in coconut oil. Add cumin, coriander, salt, pepper, juice of half lime. When chicken is done cooking, add to chicken in stock. Pour 20 oz water. Cook 15 mins.

Add drained black beans and fire roasted tomatoes. Add juice of another half lime

Simmer for 15 minutes Heat 2 small tortilla's on a pan until crispy and cut in strips . Add 1/4th cup cheese to bowl before adding soup Add avocado, pinch of cilantro and lime on top Enjoy!
