Sweet potato pancakes

This delicious high fiber + nutrient dense sweet potato pancake recipe is a nutritional client fav! Enjoy any day of the week, no offense Sundays!🥞💛


4 Sweet Potato (small) 8 Egg (whisked)
2 tbsps Coconut Oil
1 tsp Cinnamon

1/4 cup Maple Syrup

Optional: 1/4 cup berries + 2tbsp fav nut butter on top


• You can dice the sweet potato into smaller pieces once you peel it. Briskly bring 2 inches of water to a boil in a saucepan. Place the sweet potato in a steamer and cook for 7 minutes, or until a fork can easily go through it. The sweet potato should be drained of the liquid and then mashed with a fork.

• Serve each serving of mashed sweet potato with 1/2 cup (50 g) mashed sweet potato. Beat the eggs thoroughly into the potatoes.

• Preheat a large pan over medium heat and melt the coconut oil. As soon as the skillet is hot, pour one-eighth cup to one-quarter cup of batter at a time. Brown each side for 3-5 minutes. Pour maple syrup and cinnamon on top of the pancakes.

• Add your fav nut butter for added protein + fat
